Homemade bagels
This is a delicious recipe for making the best homemade bagels.

500g unbleached white flour
10g dry instant yeast
10g salt
150g yeast
200g demineralized water
3l water (for boiling)
15ml baking soda (for boiling)
1/4 cup honey (for boiling))
Everything spice, or sesame or poppy seeds
Étapes de la recette
- Mix dry ingredients (flour, salt and yeast) in a big glass bowl.
- Mix wet ingredients (milk + demineralized water) in a glass measuring cup going in microwave
- and warm it 1-2 minutes in microwave so it’s warm but not hot ( e.g. 45 C)
- Mix wet and dry ingredients with a wooded spoon until all the flower is wet and you can form a
- ball of dough or use a stand up mixer with bread hook to do the job for you.
- Cover you dough ball in the glass bowl with a lid or plastic wrap and let sit to rise for 2h.

- Remove the dough ball from your bowl, put it onto a flowered surface so it does not stick, and
- cut in 6-8 equal pieces with a bread cutter or knife. I used real bread making tissue to put my
- dough on but you can put it onto a wooded board or clean counter with flour on it so it does not
- stick.
- Make little dough balls with each pieces (6-8) by folding them onto themselves and rolling them,
- and let sit 10-15 min.
- Flatted your little balls gently if you want, just a very little bit, more like the thickness of a bagel.
- Poke a hole in the middle of each of you ball, with your index and thumb, and enlarge it up to
- the hole size you want for your bagel.
- Let sit those formed raw bagel for 30 min
- Meanwhile, prepare your boiling water: Add the bicarbonate de soude and honey into room
- temperature water (demineralized would have a better teste than chlorinated tap water, put to
- boil (should take about 20 mins so perfect time you’re your bagel dough to rise.
- During that time, also start your oven at 350 F.
- Prepare your bagel rack: Place a cooking rack on top of a baking sheet (you can put parchment
- paper also on the baking sheet but the bagels will be cooked on the rack so there are well
- golden on both side) a regular big one would usually holds approx. 6 without touching or 8
- touching).
- Once the water is boiling, put approx. 4 bagels at the time in the boiling water bath, let boil for
- 30 seconds per side (1 min per bagel total) and remove with a spoon with holes and put on your
- cooking rack letting the water drip, do the same for all bagels. The qty of bagels that fits your
- pot should be max so bagels don’t go on top of each other.
- Dip (or sprinkle) your bagels with the topping of your choice and put back on the cooking rack.
- Cook for approx. 20 minutes at 350 F depending on your oven. I cook mine for 19 minutes, till
- perfect golden colour.
- Let dry on rack . Enjoy.
