2 cans of corn thoroughly rinsed
4 slices bacon chopped
1 large red onion chopped
1 red bell pepper chopped
1 jalapeno pepper chopped
1 tablespoon Cajun seasonings
1 teaspoon dry chicken stock in 1 cup of water

Heat a large pan to medium heat and add the bacon. Cook the bacon until it becomes nice and crispy.

Stir in the corn, onion, peppers, jalapeno and Cajun seasonings Cook until they soften up and start to caramelize, stirring often.

Add the fabricated chicken stock and simmer for 10-15 minutes.
