1 ham bone
1 1/2 cup celery chopped
1 1/2 cup carrots sliced
1 1/2 cup diced cooking onions
1 bunch green onions chopped
1 tbsp thyme
2 tsp black pepper
2 hot peppers (red chile)
1 1/2 cup sliced potatoes
1 cup split peas
1 tbps oil

Broth

Typically I make a ham broth before making the actual soup. I start with a ham bone-in, use the ham for sandwiches and other recipes until there a small but decent amount (1-2 cups) of ham still on the bone. I fill a pot with about 4.5l of water and bring it to boil with the ham bone, some cooking onion and anything else you have leftover in the fridge. Typically I use some cabbage. Let it simmer for 4-5 hours on low heat. When you are ready to make the soup strain the ham bone and other ingredients from the broth.

 

Soup

1. Simmer the onion and celery in the pot fro 4-5 minutes.

2. Add back 4l of the broth.

3. Set the ham aside to cool before pulling it off the bone and apart.

4. Add the potatoes, hot peppers, peas, and green onion to the pot broth.

5. Add the pepper and thyme.

6. When it is cool enough tear apart and add the ham.

Cook for about 2 hours on low-med heat allowing the soup to thicken nicely. Enjoy with a baguette or a homemade slice of bread.
