Carrot salad
This delicious recipe is a healthy, tasty alternative salad that goes with almost everything. In this photo we have paired it with a salmon done with Tennessee BBQ spice and asparagus cooked with a tiny bit of oil and a lot of garlic.
Salad
Grate carrots and place in a bowl. Multi-coloured carrots work wonderfully in this salad to add both flavour and colour. Note that we prefer to use a Julienne peeler for grating the carrots.
Dressing
In a small mixing bowl, mix oil, vinegar and mustard. Add pepper and tarragon to taste. Don't be shy with the tarragon! You should be able to see a lot of it in your mix when done.
Alternatives
Feel free to play around with this recipe and see what works for you. During garden season we mixed in some fresh tomatoes and cucumber from the garden and paired it with the ginger salmon and it was fantastic.
