Frank's red hot sauce

Old cheddar or monteray jack cheese
4 slices bread
Recipe instruction
Beat eggs, pepper and 8-10 dashes of hot sauce in mixing bowl. Cut 3/4 inch of cheese and cut in cubes. Start the toast. Warm non-stick pan on medium heat and add egg mixture. Use a wooden spoon to scrape cooked eggs from the bottom of the pan. As eggs start to cook add the cheese.
The key to good scrambled eggs is to not overcook them, which means as they start to cook you turn the burner down a bit until when finished the burner is off. They should take as long as the toast to cook, any longer and they will be dry like cafeteria eggs.
