1 *25 ounce( package of active dry yeast
1 table spoon of white sugar
2 1/2 cup of warm water (110 degrees)
2 tablespoons of olive oil
1 tablespoon of salt
1/2 cup of whole wheat flower
5 1/2 cups of white flour

Dough

In large mixing b0wl dissolve yeast and sugar in the warm water to sit until creamy, about 10 minutes(Water should be 110 degrees)

Stir olive oil , whole wheat flour, salt and 5 cups of white flour into the yeast mixture.  Mix in  the remaining flour, 1/2 cup at a time
stirring well after each addition.  When the dough has pulled together turn it out onto a lightly floured  board and knead  until smooth and
elastic about 8 minutes. Lightly oil a large mixing bowl and put  it in and turn it to coat with oil. Cover with  a damp cloth  and put it ion a warm place to rise until doubled in volume, about 1 hour.(I usually turn my oven to 400 degrees for a minute and then turn it off.   I also boil
some water in a small pot and put it in the oven to provide some steam)

Deflate THE DOUGH by punching it down and turn it out onto a lightly floured surface.  Divide the dough into three equal pieces  and
form rounds. Cover the rounds and let them rest for about 10 minutes. Preheat the oven to 425 degrees.

Use a rolling pin and roll into desired shape and cover with your favourite topping and bake at 425 degrees for about 20 minutes or until
crust and cheese are golden brown.
Note:  I usually make two round rolls instead of three.  Also, if you don't have whole wheat flour you can try just using white flour.  I
usually start kneading in my mixmaster, but you can try it in the cusinart or of course, by hand. Two rounds usually makes 2 thin crusted
