Nat's Kale Caesar salad

This salad is so good that it holds the record for number of times guests has requested the recipe after trying it. When done correctly it is super tasty and pairs well with ribs, salmon and more.

    Kale (green, black or mix it up)
    Raisins
    Cashews
    Grated Parmesan cheese
    1 sweet or red onion
    6 tbsp Mayonnaise ( or 1 cup)
    2 tbsp Dijon mustard ( 1/3 cup)
    10-15 dash Fish sauce (1 tbsp)
    1 lemon
    5-8 cloves of garlic
    Pepper

    Salad: 

    Clean kale and remove the thick stems, chop onion (paper thin) and mix together with cheese, cashews and raisins. The cashews and raisins are the healthier replacements for croutons and bacon respectively, feel free to add the latter on special occasions.

     

    Dressing:

    In a large measuring cup add mayonnaise, dijon mustard ans fish sauce. Squeeze in a lemon with a squeezer, but if you are squeezing by hand you will want to do 1-2 more because you get less juice by hand. Add in the crushed garlic, fresh garlic (approx. 5 big cloves or  8 small cloves). Fresh is important and crushed with a garlic crusher is important as well as it is better to release the flavour than cutting by hand. Pepper to taste.

    Note, that most people that fail to reproduce this recipe do so by (1) skipping the fish sauce and (2) by not adding enough garlic. There should be enough garlic that the dressing is a bit hot.
