Recipe instruction

Fish

In a mixing bowl mix Cajun spice, vinegar/lemon, olive oil. Place fish on a baking sheet with foil, very lightly oiled. Brush sauce onto the fish saving some for during the cooking process.

Chips

Peel and cut potatoes. Add 1 tbs oil to a cooking tray.

Cooking

Heat BBQ to 400C with Chips tray on it (no chips yet). Leave for 5minutes until oil is hot. Place chips on BBQ for 5 minutes, mixing them around so they do not stick. After 5 minutes place the fish on the BBQ and continue moving fries around for remaining 15-20 minutes until everything it done. If the fish releases water onto the tray then punch holes in the foil to let it drain. Add more sauce to the fish with about 5 minutes remaining on the grill.
